BADAM HALWA | ALMOND PORRIDGE – KETO | PALEO | DIABETIC FRIENDLY

Another super easy recipe for those days when you are in no mood to cook anything for yourself or when you crave something sweet and have nothing around. And this healthy take on one of the most famous Indian Desserts, Suji Ka Halwa or Sheera, takes only about 10 mins to make. Being Keto, Paleo, Diabetic Friendly, Gluten Free and Anti-Inflammatory, almost anyone can enjoy this Halwa guilt-free. It’s super nutritious (healthy fats, fibre and protein) & packed with flavours. INGREDIENTS
3 Tbsp Ghee (Clarified Butter)
1 Cup Almond Flour
3/4th Cup Hot Water/Almond Milk
1/2 Tsp Cardamom Powder
Saffron Strands/Vanilla Essence (Optional)
4 Chopped or Slivered Almonds
5 Dried Unsweetened Blueberries (or any friendly berries)
Stevia/Erythritol Sweetener as per taste

METHOD

  • Heat a pan with clarified butter on low flame. You can reduce the ghee if it feels too much for you.
  • Add Almond Flour to this and keep roasting while continuously stirring. If you don’t have Almond Flour, just grind some Almonds in a grinder and voilà! There you have it, some freshly ground Almond flour.
  • While roasting, you can keep the flame on low-medium heat.
  • The nutty aroma is actually a hint that the flour is getting roasted really well. Allow it to brown evenly and soak up all the ghee well. It will start looking drier and crumblier.
  • Now lower the flame and add hot water very carefully. It will splutter and that’s pretty hot to touch! So careful. You can alternatively add Almond Milk. I have always made this with water so I’m not sure how he milk one would go. I usually add half of the water first and then as required keep adding more.
  • If you are using Saffron Strands, you can mix it with the almond milk/water and add it in the previous step. I’ve never tried with Saffron.
  • Keep continuously stirring. You’ll notice that in no time, the flour will start absorbing most of the water.
  • If you add in more water, it will become something like a thick porridge. That tastes good as well, but you might want to add in more sweetener.
  • When the mixture starts leaving the sides of the pan and starts forming a dough, add in the sweetener of your choice. I prefer to mix in a little Stevia with a little Erythritol.
  • Also add in the Cardamom Powder. Or add in Vanilla extract/essence if you want to try something different. Never used the latter.
  • Add in the dried unsweetened blueberries and chopped almonds. If you don’t have berries, just skip that. But I like the taste of the blueberries and the crunchy almonds with the mushy halwa texture.
  • Cook well for a minute while continuously stirring, until it looks all glossy and smooth like a halwa.
  • Eat hot!
