INGREDIENTS
1/2 Raw Papaya
1 Slice Raw Mango
1 Dry Red Chilli
1/4 Cup Grated Coconut
1/4 Tsp Turmeric Powder
1 Tsp Cumin Seeds
Water as per need
1 Tsp Oil or Ghee
1/2 Tsp Mustard Seeds
1 String Curry leaves
1/2 Finely Chopped Onion
Salt to Taste
METHOD
– Boil chopped and de-skinned Raw Papaya and de-skinned Raw Mango until cooked through. Also add the Dry Red Chilli towards the end so that it soften and cooks a little.
– Now in a grinder, add grated Coconut, Turmeric Powder, Cumin Seeds along with the above boiled Papaya, Raw Mango and Dry Red Chilli.
– Blend until smooth with the help of a little bit of water and keep aside.
– Now in a deep pan, heat any neutral flavoured Oil of your preference. You can also use Ghee instead.
– Splutter Mustard Seeds.
– Add in the Curry Leaves and Finely Chopped Onion and cook until the Onion turns translucent.
– Now add in the curry paste you prepared along with a little more water as per your liking.
– Also add in salt as per taste and mix well.
– You can also add veggies like (drumstics, boiled Raw Papaya,Boiled potatoes) or seafood (boiled Egg, Prawns, Fish).
– Cook on low to medium flame while stirring constantly until it comes to a boil.
– Serve hot with steamed Rice. I packed this for lunch with some Corn salad, stir-fried Cottage Cheese (Paneer) and Basmati Rice.
